ESTABLISHMENT
Cutting-edge haven of contemporary cool in Sydney’s heart
SOME NAMES SAY IT ALL – but you can’t say the same of Establishment. This sleek address right in downtown Sydney has it all: bars and nightclubs where the rich and famous congregate, award-winning restaurants and restful rooms where clean lines mix with understated luxury.
Establishment hums with style. Set in the heart of Sydney’s business district, it’s centre stage in a multi-level leisure complex filled with smart bars and clubs. Don’t look for rose-on-the-pillow touches here – this is a city sanctuary of minimalist chic. Vestiges of what was once a grand old heritage style building blend with cutting-edge architectural design, soaring ceilings and dramatic expanses of glass.
A glazed atrium with skyscraper views sits above original jagged walls, cast iron columns and lofty bamboos of the Garden bar, where you can graze on Thai and Australian tapas. A signature 42 metre cream marble bar spans the entire length of Establishment bar, while upstairs you’ll find Hemmesphere – a hip and extravagant sushi restaurant where low Moroccan cushions meet New York after-dark swank.

Hit the spot
Five minutes from Sydney’s myriad attractions.
Bedtime
Head for the top with a sumptuous two-storey Penthouse suite.
Be savvy
The lobby is tricky to find, so don’t be surprised to arrive via the bar. Light sleepers may find the lively nightlife a disturbance.
Be smitten
Think celebs and the city – expect to be wowed.
Go Luxe or Urban
Choose from two colour schemes in your quarters. Colourful Urban rooms have beamed warehouse ceilings, Japan black floorboards and vibrant throws or pillows. Calmer Luxe rooms have creamy colours and a more soothing vibe. All come with pure cotton sheets, generous marble or bluestone bathrooms (some with rainfall showers) and Bulgari bubbly stuff. Look out for the freshly-baked chocolate chip cookies, too.
Splash out on a penthouse suite, and it gets even better: an extravagantly huge bathroom with jacuzzi bath and twin sinks, and a metal and glass staircase rising to a gallery level where an impressively wide bed is piled with cushions.
Attention to detail is what makes Establishment extra special: room lighting with choose-your-mood settings and a touch-screen console, bathtubs designed to let you watch TV while soaking, fold-away bedside tables, iPod docks and a great Bose sound system.
This is not a hotel with those famous Sydney views (you’re in the city’s business heart) but a standout, sleek and stylish sanctuary that’s the final word in cool. Glad you’re now one of the Establishment?

Dining in
You're spoilt for choice here, with three excellent eateries on your doorstep. There's the chic Est restaurant on the first floor, complete with Sydney's biggest wine rack, a slick modern Australian menu and decor to match. Chef Peter Doyle's specialities include freshly shucked oysters with migonette sauce, and Moreton Bay bug on ocean trout boudin, black fungi and snow peas, with a flash of ginger and lime.
Tucked at the back of the Hemmesphere cocktail bar is Sushi e – arguably Sydney's best sushi restaurant. Sit around a sunken bar and tuck into sashimi, tempura and teriyaki, and book ahead. Thai fish cakes, stir fries and noodles are the tasty fare served up in the downstairs Garden Bar.
Dining out
With choices in-house like these you could be tempted not to set foot outside. When you're ready for a taste of Sydney at large, Circular Quay is a great place for eats.

Where?
Award-winning Est at Establishment.
What's cooking?
Modern Australian dishes with Asian influences. Try the seven-course tasting menu and nibble on king salmon sashimi, steamed coral trout, roasted squab pigeon and passion fruit souffle.
Top table?
Cosy up on a cream leather banquette.
See & Do
A short walk brings you to Circular Quay and all the harbour ferries. Keep going, and you'll reach Sydney Harbour Bridge or the iconic Opera House in a matter of minutes. Buses speeding along George Street outside the hotel will whisk you to Bondi or around the city centre. Book a Bridgeclimb for some of the city's best views or take an evening harbour cruise, and see Sydney's skyline dramatically silhouetted against the sky.
Shop
Compare designer labels in the dress stores of the Strand and Victoria arcades, or join Sydneysiders for a browse along Paddington's Oxford Street.
After dark
Nightlife starts here and goes on till late. Soak up the sounds at the 42 metre long main bar, where there's often live music. Or head for intimate Hemmesphere, sipping classic cocktails like Bling-Bling (freshly smashed pineapple and basil with lots more, served in a frosted martini glass) or a vodka based Retrosphere. A couple of hours at the Tank nightclub should round things off nicely.
Dates
26 January
Make sure you’re around for the Australia Day fest, when Sydney becomes one big party town.
February-March
Mardi Gras Aussie style! A month-long series of arty, social and sports events culminating in an outrageously pink parade.
