THIS LITTLE PIECE OF PARADISE is set in the hills of Marche. La Casa in Collina (meaning the house on the hill) looks across to the snow-laced peaks of the Sibilini Mountains.

This one-time 18th century farmhouse – long abandoned until owners Kim and Peppe Burelli arrived on the scene – has been transformed into a boutique little hideaway complete with a scenic 40 ft infinity pool with spectacular 360 degree hilltop views. Original stones and shuttered windows have been mixed with the best of contemporary comforts to winning effect.

Inside, La Casa in Collina is all understatedly chic. Pale tiled floors, creamy sofas and wide beds are matched by Philippe Starck bathrooms with bathtubs for two, with LCD televisions and DVD players.  All this, and you’re just 30 minutes from the beaches of Riviera delle Palme on the Adriatic.

It's a perfect place to unwind. Stretch out on a sunlounger, let off steam in the fully equipped gym, or relax by the fireplace with a book and a glass of local vino.

The smartly done out restaurant serves traditional dishes prepared with local ingredients – expect delicious pastas, fish and home-made soups – and there's an impressive wine list.

One of Italy's hidden gems, the Marche region remains blissfully crowd-free. La Casa in Collina lies within easy reach of the city of Macerata – famous for its open air opera festival – the market town of Ascoli Piceno  and the beaches of the Adriatic. You can even be on the ski slopes of the Mount Sibillini national park within an hour – though we'd find it hard to tear ourselves away from that stunning pool terrace.

Dining in
Kim Burelli has worked with world renowned chefs like Raymond Blanc, so it’s no surprise her cooking is top-notch. Fresh, simple home cooking is the order of the day here. The menu varies daily, though favourites include fillet of beef with green peppercorn and brandy sauce. Unusually for Italy vegetarians are catered for, with dishes like roasted vegetable tarte tatin with a pesto drizzle.

Dining out
Rosa di Venta in nearby Ortezzano serves excellent regional dishes and is well worth the trip.

What’s cooking?
Start with buffalo mozzarella with cherry tomatoes then try sautéed chicken breast with rosemary, garlic bulbs and a hint of chili.

The surrounding area is home to a number of ancient and interesting towns. Visit the medieval castle ruins and church of Santa Maria in Ortezzano, then head off 14th century Monsanpietro to see the works of art in the 17th century church of saints Peter and Paul. Staff will be happy to help you plan a full itinerary.

Shop
Diehard shoppers will find a few designer outlets in the vicinity where names like Todds and Prada can be found at bargain prices.

Spa
There's a spa in nearby Ortezzano. If you don’t feel like making the trip, a visiting masseur and yoga teacher can be booked at the hotel.

After dark
Have an aperitivo on the terrace, watch the sunset and wind down with a lazy night in.

Ortezzano plays host to a festival celebrating the pressing of the grapes. Needless to say the wine flows freely.

Good Friday
Monteleone di Fermo concludes its Easter worship with a beautiful night-time procession carrying the statue of the Madonna Addolorata.
