Cooking is Puglian at its most creative, and daily changing menus might feature fresh-caught tuna with capers, squid ink risotto, thyme encrusted lamb and fresh lemon and mascarpone mousse. Delicious lunches at beach club major on home-made pastas, sushi and salads.
Olive oil, almonds, figs and local fruits come from the masseria’s own farm, where ham is cured and game, ducks and geese are reared (tuck into farm-fresh eggs at breakfast). Pastries and jams are made in the kitchens and the hotel’s own boat lands daily fresh seafood.
