Do go and see the fabulous cathedral and the Palazzo dei Normanni in Palermo, and make time to wander the city's warren of squares and alleyways strung with washing and teeming with little markets. A horse and buggy ride makes a pleasant way to take in the sights. It's worth going up the valley to see the dazzling Byzantine cathedral at Monreale, while further afield, a trip to Taormina and Mount Etna – all fiery sparks at night – will be a highlight.
